Miso Pickled Vegetables (野菜の味噌漬け) Recipe

1.[ Roast miso ]  
2kg Red miso
(Mixing with grilled abou 10 times to provide rich flavor.)

2.[ To allow the alcohol to evaporate of seasoning ] 
360g Sake 
360g Sweet sake
380g Sugar
(Turn off the heat and add sugar and mix.)     

3.[ Making miso-doko ]     
Add 2 to 1 and add more seasoning below.
10 Chili pepper
20g Ajinomoto  

4.[ Cut vegetables ] 
Japanese yam 
Cucumber
Carrot   ( Hidden cuts to make easier to cook. )

5.[ Picking vegetables in miso-doko ]    
Put 4 in 3    
Cover with a paper towel and  pickle for 2days.  

6.[ Remove vegetables from miso-doko ]   
Wash vegetables with water and cut.
